Leftover Delights

Fry three new potatoes until crisp (you can miss this step but it’s worth it).

Salt a peppah them, maybe a shake if smoked paprika if you’re  feeling it.

That’s gonna be five minutes.

Then it’s six eggs, salted, and a handful of cherry tomatoes.

Grill on high so the tomatoes blister and the edges crisp up.

Top Tips:

Add a half onion five mins before the potato for a more tradition tortilla vibe.

A basil leaf or four wouldn’t go amiss.

Take the time to get the potatoes proper crispy, you won’t regret it.

Tomato ketchup on the side for me, on account of the sliced and crispy spuds.
