Two spoons of Greek yoghurt works here with the six eggs as it gives a wee edge to the mix that counters the sewer peas and potatoes.

This looks terrific but I don’t intuitively think sweet potato is a frittata thing.

There are always potato potatoes in the fridge.

It looks good though and the combo works well.

There’s a sprinkling of garam masala up top alongside the squeeze of lemon to give it an eastern flavour.

Top Tips:

Be careful when par boiling the sweet potato as you can’t be having it turn to mush.

And it’s, well, sweet! So be generous with the lemon  🍋
